South-Of-The-Border Cake
- 2 c. sifted flour
- 1/2 tsp. salt
- 1 1/2 tsp. baking powder
- 3/4 c. margarine or butter
- 1/4 c. instant coffee
- 1 orange
- 4 eggs
- 1 1/2 c. brown sugar, firmly packed
- 1/4 c. orange juice
- 1/2 c. light molasses
- Sift flour, salt and baking powder together.
- Set aside. Cream margarine and instant coffee. Cut orange into thin strips, add to creamed mixture; blend well.
- Gradually add sugar, beat well after each addition.
- Beat in one egg at a time.
- Add part of flour mixture, part of orange and molasses; beat well.
- Add remaining flour mixture, orange juice and molasses.
- Beat well. Pour into waxed paper-lined pan, 10 x 5 x 13-inches.
- Bake at 325u0b0 for 1 hour and 15 minutes.
