Fish Provencal(Yields 2 Servings)
- 1 Tbsp. butter
- 1 small onion
- 1 clove garlic, minced
- 4 oz. sliced mushrooms
- 1/4 tsp. thyme
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 large can peeled tomatoes
- 1 c. wine
- 1 lb. fish fillets
- 2 Tbsp. soft butter
- 2 Tbsp. flour
- 2 Tbsp. chopped parsley
- Melt butter; cook onion and garlic over medium heat for 5 minutes.
- Add mushrooms, thyme, salt, pepper, tomatoes and wine. Place fish in center of liquid to a boil.
- Sprinkle with parsley; cover tightly and simmer 20 minutes.
- Uncover and break fish into small pieces with fork.
- Mix soft butter and flour to a smooth paste and stir into liquid, bit by bit, cook, stirring 3 minutes longer and serve.
