Fish Provencal(Yields 2 Servings)

  1. Melt butter; cook onion and garlic over medium heat for 5 minutes.
  2. Add mushrooms, thyme, salt, pepper, tomatoes and wine. Place fish in center of liquid to a boil.
  3. Sprinkle with parsley; cover tightly and simmer 20 minutes.
  4. Uncover and break fish into small pieces with fork.
  5. Mix soft butter and flour to a smooth paste and stir into liquid, bit by bit, cook, stirring 3 minutes longer and serve.
  6. Enjoy!
