Ranchero Casserole
- 1 lb. ground beef or turkey
- 1 medium chopped onion
- 1 (4 oz.) can chopped green chilies
- 1 (8 oz.) can tomato sauce
- 1 c. whipping cream
- 1 pkg. corn tortillas
- 3 c. shredded cheese (Cheddar)
- 1/3 c. oil
- In large skillet, brown ground meat with onion.
- Add chilies, tomato sauce and cream.
- Simmer 10 minutes.
- Take package of 12 corn tortillas; stack and cut into thin strips.
- Heat oil in large frying pan.
- Saute the strips, turning often.
- Lightly grease a 2-quart casserole and place half of the strips in it.
- Cover with half of the meat sauce.
- Sprinkle with 1 1/2 cups shredded cheese. Layer rest of strips, then meat sauce and top with another 1 1/2 cups cheese.
- Bake at 350u0b0 about 25 minutes.
- Serves 6.
