Chewy Oatmeal Cookies
- 1/2 c. Egg Beaters or 2 eggs
- 2/3 c. oil
- 1 c. granulated sugar
- 1 c. packed brown sugar
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1 tsp. baking soda
- 3 Tbsp. boiling water
- 2 c. all-purpose flour
- 1 c. old-fashioned rolled oats
- 1 c. quick rolled oats
- 1/2 c. raisins (optional)
- 1 c. chopped nuts (optional)
- Preheat oven to 350u0b0.
- Beat eggs until fluffy. Add oil, sugars, vanilla and salt. Dissolve the baking soda in boiling water and add to mixture.
- Combine flour and oats.
- Gradually add to oil mixture.
- Mix until smooth.
- Add raisins and nuts. Drop from spoon onto nonstick cookie sheet. Bake 10 to 12 minutes. Remove from pan at once to cooling rack.
- Yields 6 dozen.
