Cook The Book: Smoky Oven-Roasted Spareribs
- 1 1/2 cups cider vinegar
- 1/2 cup water
- 1 cup ketchup
- 2 tablespoons Worcestershire sauce
- 3 tablespoons light brown sugar
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon liquid smoke
- 1/2 teaspoon red pepper flakes
- 4 to 6 pounds spareribs, cut in half
- Preheat the oven to 325u0b0F.
- In a small saucepan, combine all the ingredients except the ribs, bring almost to a boil, reduce the heat to low, and stir till the sugar dissolves and the sauce is smooth. Simmer for about 10 minutes longer, and set aside.
- Position the spareribs in a large, shallow roasting pan, baste well with the sauce, and roast, uncovered, till very tender, about 2 hours, basting the ribs with the sauce every 30 minutes.
- To serve, cut the ribs into serving portions, heat the remaining sauce, and serve it on the side.
