Meat Lite: Cemita Strata Recipe

  1. Butter 9 by 13-inch baking dish. Set aside.
  2. Heat the oil in a large saute pan over medium heat and add the chorizo, cumin, scallion, and black beans. Cook, stirring often, until the chorizo has rendered some fat and the scallions have softened, about 5 minutes. Set aside. In a large mixing bowl, combine the eggs, milk, cilantro, and a few heavy pinches salt and pepper.
  3. To bake the strata, preheat the oven to 350u0b0F and then bake for 45 minutes to 1 hour, until golden brown and a tooth pick inserted comes out clean. Let cool for at least 10 minutes before serving.
