Marshmallow And Fruit Salad
- 1 (28 oz.) chunk pineapple, drained (save a bit of juice)
- 1 lb. red grapes
- 1 (8 oz.) cream cheese, softened
- 1 small can mandarin oranges, drained
- chopped pecans or walnuts (optional)
- maraschino cherries (optional)
- 1 to 2 c. miniature marshmallows
- 1 to 2 c. halved strawberries
- Drain and cut pineapple or leave in chunks.
- Cut grapes in half or can be left whole.
- Mix softened cream cheese with 3 tablespoons of the pineapple juice.
- I usually add a teaspoon of sugar.
- Whip the whipping cream in another bowl, adding a teaspoon of sugar.
- Mix cream cheese and whipping cream together carefully. Fold in all the fruit.
- Can be served immediately, but letting it refrigerate a while or even overnight will blend the flavors a little bit.
