Azteca Lasagna Mexicana
- 1 pkg. Azteca flour on corn tortillas
- 1 lb. ground beef
- 1 c. salsa
- 1 (15 oz.) can tomato sauce
- 1 pkg. taco seasoning mix
- 1 (16 oz.) carton cottage cheese
- 2 eggs
- 1 tsp. oregano
- 1 1/2 c. shredded Cheddar and Monterey Jack cheese, mixed
- Heat oven to 375u0b0.
- Brown meat and drain.
- Stir in salsa, tomato sauce and taco seasoning.
- Simmer, stirring frequently for 5 minutes.
- In separate bowl, combine cottage cheese, eggs and oregano.
- Line bottom of lightly greased 13 x 9-inch baking dish with half of the tortillas, overlapping edges.
- Top with half the meat mixture.
- Spoon cottage cheese mixture over meat.
- Arrange remaining tortillas over cheese mixture.
- Spread remaining meat mixture over all and top with shredded cheese.
- Bake for 30 to 35 minutes or until bubbly.
- Let stand 10 minutes before serving.
