Cherry Vanilla Fudge

  1. Combine sugar, salt, cream, milk, corn syrup and butter in large heavy saucepan or skillet.
  2. Cook over medium heat, stirring constantly until mixture comes to a boil.
  3. Continue cooking, stirring occasionally until candy thermometer reaches 238u0b0 (soft ball stage).
  4. Remove from heat and cool (100u0b0).
  5. Add vanilla. Beat briskly until fudge thickens and begins to lose its gloss. Stir in cherries.
  6. Pour into buttered 8-inch square pan.
  7. Cool and cut into squares when firm.
  8. This fudge is pretty to serve at Christmastime.
  9. Makes 1 3/4 pounds.
