Cherry Vanilla Fudge
- 3 c. sugar
- 1/2 tsp. salt
- 1 c. light cream or evaporated milk
- 1/2 c. milk
- 1/4 c. light corn syrup
- 2 Tbsp. butter or margarine
- 2 tsp. vanilla
- 1 c. red and green glace candied cherries, cut in quarters (do not use maraschino cherries)
- Combine sugar, salt, cream, milk, corn syrup and butter in large heavy saucepan or skillet.
- Cook over medium heat, stirring constantly until mixture comes to a boil.
- Continue cooking, stirring occasionally until candy thermometer reaches 238u0b0 (soft ball stage).
- Remove from heat and cool (100u0b0).
- Add vanilla. Beat briskly until fudge thickens and begins to lose its gloss. Stir in cherries.
- Pour into buttered 8-inch square pan.
- Cool and cut into squares when firm.
- This fudge is pretty to serve at Christmastime.
- Makes 1 3/4 pounds.
