Pecan, Rice And Crawfish Dressing
- 1 lb. lean ground beef
- 1 medium onion, chopped
- 1 celery rib, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 2 garlic cloves, minced
- 2 (16 oz.) pkg. cooked crawfish tails
- 2 c. cooked rice
- 1 c. chopped pecans, toasted
- 1/4 c. butter, cut in pieces
- 1 bunch green onions, chopped
- 2 Tbsp. creole seasoning
- 1/2 tsp. pepper
- parsley
- Put first 7 ingredients in a pot and cook over medium high heat for 10 minutes, stirring until beef crumbles and in no longer pink. Stir in crawfish and next 6 ingredients. Cook for 3 minutes or until thoroughly heated. Spoon mixture into a lightly greased 13 x 9-inch baking dish. Bake at 350u0b0 for 25 to 30 minutes until lightly brown. Sprinkle with parsley.
