Sparkling Jewel Mold
- 1 (4 serving size) pkg. strawberry jello
- 2 c. boiling water, divided
- 1 c. cold water, divided
- 2 (4 serving size) pkg. lime jello, divided
- 1 1/2 c. pineapple juice, divided
- 1/4 c. sugar
- 2 c. thawed light Cool Whip topping
- 1/2 c. light Miracle Whip dressing
- Dissolve strawberry gelatin in 1 cup of the boiling water. Add 1/2 cup of the cold water. Pour into 8-inch square baking pan. Dissolve 1 package of the lime gelatin in remaining 1 cup boiling water. Add remaining 1/2 cup of cold water. Pour into 8-inch square baking pan. Refrigerate both gelatins until firm, about 4 hours. Cut into 1/2 inch cubes. Bring 1 cup of the pineapple juice to boil in small saucepan. Add remaining package of lime gelatin and sugar; stir to dissolve. Add remaining 1/2 cup cold pineapple juice; refrigerate until slightly thickened. Stir combined whipped topping and dressing into lime gelatin; refrigerate until slightly thickened. Fold in gelatin cubes. Pour into 6 1/2 cup mold. Refrigerate overnight or until firm.
- Unmold. Makes 12 servings.
