Fruit Cake
- 1 pkg. spice cake mix
- 1/2 c. applesauce (1 c. to moist)
- 4 eggs, unbeaten
- 1 tsp. salt
- 1 tsp. orange extract
- 1 lb. cut dates
- 8 oz. whole candied cherries, drained
- 8 oz. pineapple (candied) green, drained
- 1 lb. walnut halves (4 c.)
- 3/4 c. flour
- Empty cake mix in large bowl.
- Add applesauce, eggs, salt and orange extract.
- Beat 3 minutes until smooth and creamy.
- Combine fruit, nuts and flour and mix well.
- Stir into batter mixing well. Line two 8 x 8 x 3-inch loaf pans with triple thickness of wax papers or 1 layer of brown paper sack and pour into pans.
- Line sides also.
- Bake in slow oven at 275u0b0 for 2 3/4 hours.
- If gets dark on top before done, cover with paper whenever you want.
- Cool in pans.
- Wrap and store.
- Delicious.
