Pasta With Vegetables
- 2 c. broccoli flowerets
- 1 large carrot
- 1 zucchini
- 8 oz. 3 color pasta curls
- 1/4 lb. sliced mushrooms
- 1/3 c. sliced green onions
- 3 cloves garlic, minced
- 1/4 tsp. dried thyme
- 3 Tbsp. Parmesan cheese
- 2 to 3 Tbsp. margarine
- 1/2 to 3/4 c. sharp Cheddar, shredded
- 2 Tbsp. oil (polyunsaturated)
- Cut carrot and zucchini in julienne strips.
- Cook broccoli, carrots and zucchini in water for 4 minutes.
- Cook pasta according to package directions.
- In large skillet, heat oil and saute mushrooms, green onions, garlic and thyme until tender.
- Combine vegetables, pasta and onion mixture; mix well.
- Add margarine and Parmesan cheese.
- Mix and top with sharp Cheddar.
- Serves 6.
