Picante Potatoes
- 6 medium red potatoes, washed
- 2 medium onions, cut in half lengthwise, cut crosswise into thin slices
- 1/2 c. water
- 1 stick butter, melted
- Salt and black pepper
- 1 c. Pace picante sauce
- 1 c. shredded cheddar cheese
- Spray 9 x 11 ovenproof dish with cooking spray.
- Cut unpeeled potatoes crosswise into 1/8 or 1/4 inch slices, being careful not to cut all the way through so the potato remains intact.
- Place cut side up in dish.
- Slip onion slices in between cuts in potato, rounded side up. Pour 1/2 cup water
- into dish.
- Pour butter evenly over potatoes; sprinkle lightly with salt and pepper. Cover with foil and bake in preheated oven at 425u0b0 1 hour 15 minutes or until fork tender. Remove from oven; spoon picante sauce evenly over each potato. Sprinkle with cheese; return to oven and bake uncovered just until cheese is melted.
