Diabetic - Hot Fudge Pudding
- 1 c. flour
- 3 Tbsp. granulated sugar replacement
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3 (1 oz.) sq. bitter chocolate
- 2 Tbsp. white vinegar
- 1/3 c. skim milk
- 2 Tbsp. liquid shortening
- 2 Tbsp. granulated brown sugar replacement
- 1 3/4 c. boiling water
- Sift flour, granulated sugar replacement, baking soda and salt into medium mixing bowl.
- Melt 1 square of the bitter chocolate. Add vinegar, milk, shortening and the melted chocolate to flour mixture; stir to blend.
- Pour into well-greased 8-inch square dish; sprinkle with brown sugar replacement.
- Add remaining chocolate to the boiling water; heat until chocolate is melted. Pour chocolate-water mixture over pudding batter.
- Bake at 350u0b0 for 45 minutes.
- Serve warm from baking dish.
- Yields 10 servings.
