Peanut Oat Chip Cookies
- 1/2 c. margarine (1 stick)
- 1/2 c. crunchy peanut butter
- 1 1/4 c. packed brown sugar
- 1/2 c. granulated sugar
- 2 eggs
- 1 Tbsp. powdered cultured buttermilk
- 2 Tbsp. strong brewed coffee
- 1 3/4 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 1/2 c. old fashioned rolled oats
- 1 (12 oz.) pkg. semi-sweet chocolate bits
- 1 c. chopped dry roasted peanuts
- Cream together the first seven ingredients.
- Add flour, baking soda and salt and stir.
- Add rolled oats, chocolate bits and peanuts and mix.
- Drop by large teaspoonfuls onto a greased baking sheet.
- Bake at 375u0b0 for 12 minutes.
- Makes 5 to 6 dozen cookies.
