Greek Salad
- 4 plum tomatoes, seeded and diced
- 1/2 red onion, chopped
- 1/2 seedless European cucumber, diced
- 1/4 c. chopped fresh flat leaf parsley
- 1/2 c. pitted Kalamata black olives, chopped
- 1/2 lb. feta cheese, crumbled
- 4 pepperoncini hot peppers, chopped
- Salt and pepper to taste
- 1 c. plain Dannon yogurt
- 1 tsp. dry oregano leaves
- 1 tsp. ground cumin
- 1 Tbsp. lemon juice
- 2 Tbsp. red wine vinegar
- Warm pita breads (optional)
- Combine first 7 ingredients in a bowl.
- Season with salt and pepper.
- Combine yogurt with lemon juice, red wine vinegar, oregano and ground cumin.
- Mix thoroughly.
- Add dressing to salad and toss.
- Adjust seasoning.
- Eat salad as is or piled in warm pita breads.
- Yield:
- 4 servings.
