Light-As-A-Feather Gingerbread
- 2 c. flour
- 3/4 tsp. salt
- 1/2 tsp. soda
- 1 1/4 tsp. baking powder
- 1 1/4 tsp. ginger
- 1 1/4 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 to 2/3 c. oil
- 2 eggs
- 1 1/3 c. molasses
- 1/2 c. boiling water
- Lemon Sauce
- Sift flour, salt, soda, baking powder, ginger, cinnamon and cloves into large bowl.
- Stir in enough oil to make mixture crumbly.
- Add eggs; beat well.
- Combine molasses and boiling water in bowl; mix well.
- Add 3/4 cup molasses mixture to flour mixture; beat until smooth.
- Add remaining molasses mixture, stirring just until well mixed.
- Pour into greased 8-inch square baking pan. Bake at 325u0b0 for 1 hour or until gingerbread tests done.
- Serve warm with Lemon Sauce.
- Yield:
- 16 servings.
