Chicken Chow Mein

  1. In a large skillet, cook and stir onion and mushrooms in oleo until onion is tender.
  2. Add enough water to mushroom liquid to measure 1 1/2 cups.
  3. Stir into onion/mushroom mixture with celery, bean sprouts, soy sauce and sugar.
  4. Heat to boiling.
  5. Reduce heat and simmer uncovered for 15 minutes.
  6. Blend the 3 tablespoons water and cornstarch; stir into vegetable mixture.
  7. Cook, stirring constantly, until mixture thickens and boils.
  8. Boil and stir 1 minute.
  9. Stir in chicken; heat through.
  10. Serve over chow mein noodles.
