Cherry Cheesecake Muffins
- 8 oz. cream cheese, softened
- 1/4 c. sugar
- 1 large egg
- 2 c. all-purpose flour
- 1/2 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. milk
- 1 large egg
- 1/4 c. vegetable oil
- 1 c. cherries (no pits)*
- Preheat oven to 350u0b0.
- Line 12 muffin cups with paper liners or grease muffin cups.
- With an electric mixer, beat cream cheese, 1/4 cup sugar and 1 egg until smooth.
- Set aside.
- In a large mixing bowl combine the flour, 1/2 cup sugar, baking powder and salt.
- Add the milk, egg, and oil and stir together just enough to moisten dry ingredients.
- Add the cherries and stir together. Spoon the batter into muffin cups, about 1/2 full each.
- Spoon a layer of the cream cheese mixture over the batter in each cup. Add spoonfuls of batter on top of the cream cheese layer until 2/3 or more full.
- Bake at 350u0b0 for 30 minutes or until wooden pick inserted in the center comes out clean.
- Remove from oven and let cool 10 minutes.
- Remove from pan.
- Makes 12 muffins.
