Jambalaya(A Fabulous One Pot Meal.)
- 1 c. chopped onion
- 1 c. chopped bell pepper
- 2 cloves garlic, pressed
- 1 c. cooked diced ham
- 12 small pork link sausages, cooked, drained and cut in thirds
- 1/2 tsp. thyme
- 1/4 tsp. chili powder oil
- 1 1/2 lb. cooked, cleaned shrimp, chopped
- 1 c. chicken stock
- 1 (16 oz.) can tomatoes
- 1 c. uncooked long grain rice
- 1 Tbsp. parsley, chopped
- Saute onion, bell pepper and garlic in a little oil until tender.
- Add chicken stock, ham and sausage; cook for 5 minutes. Add remaining ingredients, just to mix.
- Put in a 13 x 9 x 2-inch casserole.
- Cover tightly with tinfoil.
- Bake at 350u0b0 for 50 minutes, or until rice is done and liquid absorbed.
- Makes 6 servings.
