Larkin'S Chili
- 1 lb. hot sausage (turkey or beef), remove casing and crumble
- 1 lb. sweet sausage (turkey or beef), remove casing and crumble
- 1 lb. coarsely ground chuck steak
- 1 1/2 onions, chopped
- 3 cloves garlic, minced
- 1/2 stalk celery, minced
- 1 (16 oz.) can cooked tomatoes (whole peeled)
- 1 can tomato paste (6 oz.)
- 1 can tomato puree (8 oz.)
- 1 Tbsp. oregano (Mexican)
- 5 Tbsp. chili powder
- 1 Tbsp. cumin powder (optional)
- 1 tsp. Tabasco sauce
- 1/2 can beer (6 oz.)
- 1/2 tsp. salt
- 2 bay leaves
- 2 Tbsp. oil
- Brown sausage in oil.
- Remove and save.
- Add onions and garlic.
- Saute until tender.
- Return sausage to the pot and add tomatoes, paste, puree, celery and spices.
- Mix.
- Add beer and cook over low heat for 3 to 4 hours.
- Serve with red kidney beans.
