Dinner Tonight: Acorn Squash, Shrimp, And Green Bean Stew (Ginataan Sitawa Kalabasa) Recipe
- 1 tablespoon butter
- 1 small onion, chopped
- 1 one-inch ginger stem, peeled and minced
- 1 clove garlic, minced
- 8 ounces shrimp
- 1 14-ounce can coconut milk
- 1 acorn squash, peeled and cut into 1/2-inch cubes
- 8 ounces green beans, cut into 3-inch segments
- Salt and pepper
- chile paste (optional)
- Add the butter to a large skillet set over medium heat. When melted, toss in the onion, ginger, and garlic. Cook for 5 minutes, stirring occasionally, until fragrant.
- Dump in the shrimp, cook for 3 minutes, and then remove.
- Pour in the coconut milk, stir well, and simmer for 30 minutes.
- Add the squash and the green beans. Stir well, and simmer for 20 minutes. Then add the shrimp back to the skillet, season with salt and pepper, and serve.
