Stuffed Flounder
- 1/4 c. chopped onion
- 1/4 c. butter or margarine
- 1 (3 oz.) can mushrooms (reserve liquid)
- 1 (7 oz.) can frozen crabmeat
- 1/2 c. saltine cracker crumbs
- 2 Tbsp. snipped parsley
- 1/2 tsp. salt
- dash of pepper
- 8 flounder fillets (2 lb.)
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1/4 tsp. salt
- milk
- 1/3 c. dry white wine
- 4 oz. Swiss cheese, shredded
- 1/2 tsp. paprika
- In skillet, cook onions in butter until tender.
- Stir drained mushrooms into skillet with crab, crumbs, parsley, 1/2 teaspoon of salt and pepper.
- Spread mixture over fillets.
- Roll fillet; place, seam side down, in 13 x 9 x 2- inch baking dish.
