Chunky Beef Noodle Soup
- 1 lb. beef boneless round steak, cut into 3/4-inch pieces
- 1 large chopped onion
- 2 cloves garlic, finely chopped
- 1 Tbsp. oil
- 2 c. water
- 1/4 c. snipped parsley
- 2 tsp. chili powder
- 1 tsp. salt
- 1/2 tsp. dried oregano
- 1 can whole tomatoes (undrained)
- 1 can condensed beef broth
- 1 c. uncooked noodles
- 1 medium green pepper, coarsely chopped
- Cook and stir beef, onion and garlic in oil until beef is done.
- Stir in water, chili powder, salt, oregano, tomatoes and broth.
- Heat to boiling.
- Reduce heat.
- Cover and simmer until beef is tender, about 1 1/2 to 2 hours.
- Skim excess fat from soup.
- Heat to boiling; reduce heat.
- Stir in noodles and green pepper.
- Simmer, uncovered, until noodles are tender.
- Stir in parsley.
