Italian Casserole
- 1 (12 oz.) pkg. pasta shells
- 8 oz. cottage cheese
- 6 Tbsp. melted butter
- 2 (8 oz. each) cans tomato sauce
- 1 c. sliced mushrooms
- 1 diced green pepper
- 1 c. thinly sliced pepperoni
- 2 (6 oz. each) pkg. presliced Mozzarella cheese
- 1/2 lb. ground beef
- dried oregano leaves
- salt to taste
- black pepper to taste
- Cook pasta shells as directed on package. Drain. Saute the ground beef.
- Mix cottage cheese, butter and tomato sauce until well blended.
- Stir in mushrooms and green pepper, blending well. Add oregano, salt and pepper.
- Place layer of shells in bottom of a lightly buttered casserole dish.
- Cover with layer of cottage cheese mixture. Top with half of the pepperoni.
- Place 2 slices of cheese on top. Crumble 1/3 ground beef evenly over cheese. Repeat layers, ending with cheese on top ringed with pepperoni.
- Bake at 350u0b0 for 45 minutes until hot and bubbly.
