Diabetic Apricot Bread(A Sweet Loaf Filled With Bits Of Dried Apricots.)

  1. Beat together the eggs and mashed banana until creamy.
  2. Add water, vanilla extract and oil; beat.
  3. Measure in flour, baking soda and baking powder; beat well.
  4. Stir in chopped apricot until evenly blended.
  5. Spoon batter into an oiled and floured 9 x 5-inch loaf pan.
  6. Spread batter evenly in pan.
  7. Bake at 325u0b0 for 45 minutes, or until a knife inserted comes out clean.
  8. Cool completely on a wire rack before slicing.
  9. Serves 6.
