Diabetic Apricot Bread(A Sweet Loaf Filled With Bits Of Dried Apricots.)
- 2 large eggs
- 1/3 c. mashed banana (mash ripe banana with a fork)
- 2/3 c. water
- 2 tsp. vanilla extract
- 1/3 c. vegetable oil
- 2 c. unbleached white flour
- 1 tsp. baking soda
- 2 tsp. baking powder
- 2 c. finely chopped dried apricots (see note)
- Beat together the eggs and mashed banana until creamy.
- Add water, vanilla extract and oil; beat.
- Measure in flour, baking soda and baking powder; beat well.
- Stir in chopped apricot until evenly blended.
- Spoon batter into an oiled and floured 9 x 5-inch loaf pan.
- Spread batter evenly in pan.
- Bake at 325u0b0 for 45 minutes, or until a knife inserted comes out clean.
- Cool completely on a wire rack before slicing.
- Serves 6.
