Banana-Bran Muffins
- 1 1/4 c. whole wheat flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/4 c. brown sugar
- 2 1/2 c. bran flakes cereal
- 3/4 c. milk
- 1 egg
- 1/3 c. vegetable oil
- 3 to 4 mashed ripe bananas
- 3/4 c. chopped walnuts or pecans
- Stir together flour, baking powder, salt and sugar.
- Set aside.
- Measure cereal, milk and mashed bananas into mixing bowl. Stir to combine.
- Let stand 1 to 2 minutes until cereal is softened.
- Add egg and oil.
- Beat well.
- Add dry ingredients to cereal mixture, stirring only until combined.
- Pour batter evenly into 12 greased 2 1/2-inch (or 6 jumbo size) muffin pan cups. Bake in oven at 400u0b0 about 25 minutes or until muffins are golden brown.
