Mex-Chili Bake
- 1 Tbsp. plus 1 tsp. oil
- 1 c. chopped onion
- 2 garlic cloves, minced
- 1 lb. ground turkey
- 1 Tbsp. chili powder
- 1 tsp. salt
- 1 c. diced peppers
- 1/4 tsp. pepper
- 3 c. crushed tomatoes
- 2 c. cooked elbow macaroni
- 4 oz. shredded sharp Cheddar
- 1 pkg. taco seasoning
- chopped green chili peppers
- In a 2-quart saucepan (or large skillet), heat oil.
- Add onions and garlic.
- Saute until soft.
- Add turkey, peppers and taco seasoning.
- Cook until done (3 minutes), stirring to break up meat.
- Sprinkle chili powder, salt and pepper.
- Continue to cook and stir.
- Stir in tomatoes.
- Bring to boil; reduce heat and simmer 5 minutes.
- Stir in macaroni and transfer to 10 x 6 x 2-inch baking dish.
- Preheat oven to 375u0b0.
- Bake covered 45 minutes.
- Remove cover; sprinkle with cheese and heat 5 minutes before serving.
