Jiffy Cinnamon Rolls
- 4 to 5 c. all-purpose flour
- 1 (9 oz.) box Jiffy white cake mix
- 2 pkg. quick-rise yeast
- 1 tsp. salt
- 2 c. warm water (120~ to 130~)
- 2 Tbsp. butter or margarine
- 1/2 c. sugar
- 1 to 2 Tbsp. cinnamon
- In a large mixing bowl combine 3 cups of the flour, cake mix, yeast, salt and warm water.
- Mix until smooth.
- Add enough remaining flour to form a soft dough.
- Turn out onto a lightly floured surface.
- Knead until smooth, about 6 to 8 minutes.
- Roll dough into a 9 x 18-inch rectangle.
- Spread with butter and sprinkle with sugar and cinnamon.
- Roll dough jelly-roll style, starting with the long end.
- Slice the roll into 1-inch circles. Place on greased cookie sheet.
- Cover and let rise in a warm place until doubled, about 15 to 30 minutes.
- Bake at 350u0b0 for 15 to 18 minutes.
- Brush with butter. Yields 18 to 29 rolls.
