Golden Rice Casserole

  1. Heat oven to 350u0b0.
  2. Melt butter in a large saucepan over low heat; blend in flour, salt and pepper.
  3. Cook over low heat, stirring constantly, until mixture is bubbly and smooth.
  4. Stir in chicken broth and milk; heat to boiling, stirring constantly. Boil for 1 minute and pour over the chicken, mushrooms and green pepper which have been put into an ungreased 1 1/2-quart casserole.
  5. Bake uncovered for 40 minutes.
  6. Sprinkle with almonds and parsley.
  7. Serves 8.
