Golden Rice Casserole
- 1/4 c. butter
- 1/3 c. flour
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 c. chicken broth
- 1 1/2 c. milk
- 1 1/2 c. cooked white rice
- 2 c. cooked chicken, cut up
- 1 (3 oz.) can sliced mushrooms, drained
- 1/3 c. chopped green pepper
- 1/4 c. slivered almonds
- snipped parsley
- Heat oven to 350u0b0.
- Melt butter in a large saucepan over low heat; blend in flour, salt and pepper.
- Cook over low heat, stirring constantly, until mixture is bubbly and smooth.
- Stir in chicken broth and milk; heat to boiling, stirring constantly. Boil for 1 minute and pour over the chicken, mushrooms and green pepper which have been put into an ungreased 1 1/2-quart casserole.
- Bake uncovered for 40 minutes.
- Sprinkle with almonds and parsley.
- Serves 8.
