Marinated Salad
- 1 bunch fresh broccoli
- 1 head cauliflower
- 1 lb. fresh mushrooms, sliced
- 1 pt. cherry tomatoes, halved
- 2 (6 oz.) cans pitted black olives, drained and sliced
- 2 (8 oz.) cans water chestnuts, drained and sliced
- 1 red onion, thinly sliced
- 2 (0.7 oz.) pkg. dry Italian salad dressing mix
- 1/3 c. red wine vinegar
- 1/4 c. water
- 1 1/3 c. vegetable oil
- Separate broccoli and cauliflower into florets.
- In a large bowl, combine broccoli and cauliflower florets with mushrooms, tomatoes, olives, water chestnuts and onion.
- Prepare dressing mix according to package directions using wine vinegar, water and oil. Pour dressing over vegetables.
- Cover and marinate at least 8 hours.
- Toss well before serving.
- Serves 16.
