Pork Chop Casserole
- 1 Tbsp. vegetable oil
- 4 pork chops (3/4 inch thick)
- 2 large sweet potatoes, pared and cut in chunks
- 2 large onions, sliced 1/2 inch thick
- 1 1/2 c. freshly squeezed orange juice
- 5 whole cloves
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 apples, cored and sliced in 8 wedges
- 1 Tbsp. cornstarch
- 1 Tbsp. white wine vinegar
- 2 Tbsp. chopped fresh parsley
- In large skillet, heat oil.
- Brown chops on both sides. Arrange onion and potato slices around chops.
- Combine orange juice, cloves, salt and pepper; pour over vegetables.
- Cover and simmer 30 minutes until chops are tender.
- Add apples; cover and cook 10 minutes longer.
- With slotted spoon, remove meat, vegetables and apples to serving platter.
- Remove and discard cloves.
