Vegetable Gumbo
- 3 c. sliced fresh okra
- 1 (16 oz.) can whole tomatoes, undrained
- 1 1/2 c. water
- 1 medium-size green pepper, seeded and chopped
- 1 c. fresh or frozen lima beans
- 1 c. fresh corn cut from cob
- 1/2 c. chopped onion
- 1 tsp. vegetable flavored bouillon granules
- 1 tsp. chopped fresh parsley
- 1/4 tsp. garlic powder
- 2 tsp. olive oil
- 4 oz. hot Italian turkey sausage, cut into 1/4-inch pieces
- 4 oz. boneless, skinless chicken breast, cut into 1-inch pieces

- 1 c. sliced green bell pepper
- 1/2 c. chopped onion
- 1 garlic clove, minced
- 1 1/2 c. canned crushed tomatoes
- 1/4 c. clam juice
- 1/4 c. low-sodium chicken broth
- 1/4 tsp. dried basil
- 1/8 tsp. garlic powder
- 1/8 tsp. salt
- dash of ground red pepper
- 6 oz. fresh or dried spinach fettuccine, cooked and drained
- 1 large shad
- 3 strips bacon
- 1 small onion
- You don't have to baste this recipe, just put in the oven.
- Set the timer for 5 hours at 300u0b0.
- Place heavy foil in a large roaster; put in the shad.
- Salt and pepper to taste.
- Add a small diced onion and place 3 strips of bacon on shad.
- Wrap the foil tightly and bake.
- When ready to serve, just lift the shad out of the roaster and place on serving platter.
- Pull back the foil and crimp.
