Vegetable Gumbo

  1. You don't have to baste this recipe, just put in the oven.
  2. Set the timer for 5 hours at 300u0b0.
  3. Place heavy foil in a large roaster; put in the shad.
  4. Salt and pepper to taste.
  5. Add a small diced onion and place 3 strips of bacon on shad.
  6. Wrap the foil tightly and bake.
  7. When ready to serve, just lift the shad out of the roaster and place on serving platter.
  8. Pull back the foil and crimp.
