Marinated Veggie Salad
- 1 1/2 c. shell macaroni
- 2 c. broccoli flowerets
- 1 1/2 c. cauliflower flowerets
- 1 c. sliced fresh mushrooms
- 16 oz. can artichoke hearts, drained, rinsed and chopped
- 1 c. sliced pitted ripe olives
- 1/2 c. green onion, chopped
- 2/3 c. Italian salad dressing
- 1 medium avocado, seeded, peeled and sliced
- 1 medium tomato, seeded and chopped
- Cook macaroni according to package directions.
- Drain and rinse with cold water.
- Drain well.
- In a large bowl, combine macaroni, broccoli, cauliflower, mushrooms, artichoke hearts, ripe olives and green onions.
- Toss with Italian dressing and cover. Chill several hours.
- At serving time, toss vegetable mixture with avocado and tomato.
