Aebleskiver Batter And Bananas Foster Filling Recipe
- 1 1/2 cups all-purpose flour
- 3 tablespoons sugar (add more for sweet varieties)
- 2 1/2 teaspoons baking powder
- 1/2 teaspoons cinnamon
- 1/4 teaspoons salt
- 1 large egg
- 1 cup milk
- About 2 tablespoons melted butter or margarine
- 2 medium sized, ripe bananas
- 1/4 brown sugar, packed
- 1 teaspoon cinnamon
- 2 shots rum
- In one bowl, combine all dry ingredients. In another, melt the butter and add the wet. This batter can easily (and quite successfully) be substituted with Bisquick or your favorite pancake mix-the difference is practically undetectable.
- Cut bananas into slices, then quarters. In a skillet over medium heat, cook the bananas with the brown sugar until sugar has turned into a caramel, about a minute. Add cinnamon and mix well. Pour in the rum and quickly (but carefully) flambee. (This can be done by tipping the skillet so that the rum makes contact with the gas flame, or with a long-handled lighter.) Allow the flame to cook the bananas gently for a few seconds; it will go out on its own. Remove from heat and enjoy as an ice cream topping or perfect aebelskiver filling. Remember to lick the spoon-it's a crime not to.
