Trail Mix Cookies Recipe
- 1/4 lb unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup dark brown sugar
- 1 teaspoon vanilla extract
- 1 cup all purpose flour
- 1/4 teaspoon salt
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 large egg, beaten
- 1 cup trail mix (I used 1/4 cup dried figs, and 1/4 cup chopped mixed nuts- walnuts, cashews, pecans)
- Preheat oven to 350 degrees F.
- In a large bowl combine butter, all of the sugar, and vanilla extract. Mix until fluffy. Add the flour, salt, baking powder, and egg and mix until well combined.
- Stir trail mix into the cookie dough. If you've been using an electric mixer, now is the time to turn it off and use a large spoon or your hands. Try not to overwork the dough.
- With your hands, form the dough into 24 one-inch balls and place them on two baking sheets. Use your finger tips to flatten the balls of dough. Bake for 12 to 15 minutes or until golden. Remove from baking sheet immediately and place on cooling rack.
