White Christmas Pie
- 1/2 c. sugar
- 1/4 c. flour
- 1 envelope Knox gelatine
- 1 3/4 c. milk
- 1 tsp. vanilla
- 3 egg whites
- 1/2 tsp. almond extract
- 1 c. shredded coconut
- 1/4 tsp. cream of tartar
- 1/2 c. sugar
- 3/4 c. whipped cream or whipped topping
- Blend 1/2 cup sugar, flour and gelatine.
- Stir in milk.
- Cook, stirring constantly, over
- medium heat, just to boiling.
- Chill in refrigerator; stir occasionally until mixture mounds when dropped by spoon.
- Stir in flavorings.
- Beat egg whites and cream of tartar until frothy.
- Slowly add sugar, 1 tablespoon at a time, beating until stiff and glossy.
- Don't overbeat!
- Fold in whipped cream and coconut.
- Pile into prepared pie shell.
- Chill 4 hours or longer.
- Very good served with crushed strawberries or raspberries.
