Kielbasa Tortellini Soup
- 1 Tbsp. oil
- 1 clove garlic, crushed
- 1 onion, chopped
- 1 pkg. kielbasa, sliced
- 2 (15 oz.) cans chicken broth
- 1 (16 oz.) can stewed tomatoes
- 1 (6 oz.) can tomato paste
- 1 c. water
- 1 Tbsp. Italian seasoning
- 2 to 3 carrots, shredded
- 2 celery stalks, chopped
- 3 potatoes, diced
- 1 pkg. tortellini
- 1/2 (10 oz.) pkg. frozen broccoli
- 1 red pepper, chopped
- Saute garlic, onion and kielbasa in oil until kielbasa is browned.
- Add broth, tomatoes, tomato paste, water, seasonings, carrots, celery and potatoes.
- Bring to a boil.
- Simmer 20 minutes. Add tortellini.
- Return to boil.
- Simmer 10 minutes.
- Add broccoli and red pepper.
- Cook 5 to 10 minutes.
