Strawberry Walnut Bread
- 2 c. finely chopped walnuts
- 3 c. all-purpose flour
- 1 1/2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1 tsp. ground cardamon
- 1/2 tsp. salt
- 1/4 tsp. ground nutmeg
- 4 beaten eggs
- 2 c. sugar
- 1 1/2 c. mashed strawberries (about 3 c. whole berries)
- 1 c. cooking oil
- 1 c. mashed bananas
- 1 Tbsp. finely shredded orange peel
- Grease and flour two 9 x 5 x 3-inch loaf pans.
- Sprinkle 1/2 cup walnuts in bottom of each pan; set aside.
- In large bowl, stir together flour, cinnamon, baking soda, salt, cardamon and nutmeg. In medium bowl, stir together eggs, sugar, strawberries, cooking oil, banana and orange peel.
- Add to flour mixture, stirring just until dry ingredients are moistened.
- Carefully stir in remaining nuts.
- Put in pans.
- Bake at 350u0b0 for 1 hour or until done.
- Let cool in pans 10 minutes.
- Remove loaves from pan, cool completely. Wrap and store overnight before serving.
- Makes 2 loaves.
