Baby Corn Delight
- 1 can whole baby corn, cut into pieces
- 1 small onion, chopped
- 1/4 green pepper, chopped
- 2 cloves garlic, finely chopped
- 1 plum tomato, chopped
- 1 Tbsp. oil
- 1 Tbsp. butter
- 1/4 c. cornstarch
- 1 c. whole milk
- 1 c. sour cream
- 2 oz. grated Feta cheese
- 1 envelope Sazon with coriander and annatto
- 1 Tbsp. McKay's chicken seasoning
- In a heavy skillet, stir-fry the baby corn with oil and butter. Add onion, green pepper and garlic, then add tomato and stir-fry for 10 seconds.
- Remove from heat and set aside.
- Put milk and cornstarch in a bowl and mix until smooth.
- Add to baby corn mixture and return to heat, stirring constantly.
- Add envelope of Sazon and chicken flavoring.
- Add sour cream and mix well, then the Feta cheese continuing to stir, mixing well.
- When it begins to boil, turn stove off and continue stirring for one minute.
- Let cool a few minutes and serve as a side dish or as desired. Delicious.
