Salt Cod Fritters

  1. Soak salt cod in water overnight.
  2. Combine the flour and egg in a bowl.
  3. Stir in enough water to make a thick paste and reserve.
  4. Remove any skin and small bones from the fish and chop very fine.
  5. Add the scallions, garlic, parsley, thyme, allspice, salt and pepper.
  6. Stir in reserved flour paste until thoroughly combined.
  7. Heat enough oil in a heavy pan to deep fry the fritters.
  8. Place 2 tablespoons of the mixture in the pan at a time. Allow the fritters to cook until well browned.
  9. Remove fritters from the oil and allow to drain on paper towels.
  10. Makes 25 fritters.
