Salt Cod Fritters
- 2/3 c. flour
- 6 oz. salt cod
- 3 cloves garlic, peeled and chopped fine
- pinch of allspice
- black pepper
- 1 egg
- 3 scallions, chopped fine
- 2 Tbsp. parsley, chopped
- 1 sprig thyme leaves
- salt
- vegetable oil
- Soak salt cod in water overnight.
- Combine the flour and egg in a bowl.
- Stir in enough water to make a thick paste and reserve.
- Remove any skin and small bones from the fish and chop very fine.
- Add the scallions, garlic, parsley, thyme, allspice, salt and pepper.
- Stir in reserved flour paste until thoroughly combined.
- Heat enough oil in a heavy pan to deep fry the fritters.
- Place 2 tablespoons of the mixture in the pan at a time. Allow the fritters to cook until well browned.
- Remove fritters from the oil and allow to drain on paper towels.
- Makes 25 fritters.
