Southern Gumbo
- 1 lb. boneless veal, cut in cubes
- 1/4 c. unsifted all-purpose flour
- 1/4 c. butter or margarine
- 1/2 c. finely chopped onion
- 2 (12 oz. size) pkg. frozen okra, thawed and cut into 1-inch pieces*
- 1 (1 lb. 12 oz.) can tomatoes (undrained)
- 1 c. finely chopped green pepper
- 4 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. dried thyme leaves
- 1 tsp. fine herbs
- Coat veal cubes well in flour.
- Slowly heat butter in 8-quart kettle.
- In it, brown veal cubes well, turning on all sides.
- Add onion, okra and tomatoes.
- Cover and cook 15 minutes.
- Add 2 quarts of water and remaining ingredients.
- Cover and bring to boiling.
- Reduce heat; simmer 2 hours, stirring occasionally. Makes 5 quarts (20 servings).
