Southern Gumbo

  1. Coat veal cubes well in flour.
  2. Slowly heat butter in 8-quart kettle.
  3. In it, brown veal cubes well, turning on all sides.
  4. Add onion, okra and tomatoes.
  5. Cover and cook 15 minutes.
  6. Add 2 quarts of water and remaining ingredients.
  7. Cover and bring to boiling.
  8. Reduce heat; simmer 2 hours, stirring occasionally. Makes 5 quarts (20 servings).
