Jennifer'S Lasagne
- 1 lb. lean ground beef
- 1/2 c. chopped onion
- 1 clove garlic, crushed
- 1 (16 oz.) can tomatoes, cut in pieces (reserve liquid)
- 1 (8 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 2 tsp. dried basil, crushed
- 1 tsp. salt
- 8 oz. lasagne noodles
- 1 Tbsp. oil
- 2 eggs
- 2 1/2 c. Ricotta cheese
- 3/4 c. grated Parmesan or Romano cheese
- 2 Tbsp. dried parsley flakes
- 1 lb. thinly sliced Mozzarella cheese
- 1/2 tsp. pepper
- Brown beef,
- onion and garlic.
- Drain off fat.
- Stir in the undrained tomatoes, tomato sauce, tomato paste, basil and salt. Cover
- and
- simmer for 15 minutes, stirring frequently. Boil water in
- large
- pan.
- Add
- the lasagne noodles and oil. Cook until tender.
- Drain and rinse noodles.
- Beat eggs.
- Add 1/2 cup Parmesan cheese, Ricotta, parsley and pepper.
