Crunchy Walnut Pie
- Flaky Pastry (for a single crust 9-inch pie)
- 3 eggs
- 1/2 c. firmly packed brown sugar
- 1 c. light corn syrup
- 1/4 tsp. salt
- 1 tsp. each: ground cinnamon and vanilla
- 1/4 c. butter or margarine, melted and cooled
- 1 c. broken walnuts or walnut halves
- Whipped Hard Sauce (optional; recipe follows)
- Preheat oven to 375u0b0.
- Roll out pastry and line a 1 1/2-inch deep 9-inch pie pan.
- In a bowl, beat eggs, sugar, corn syrup, salt, cinnamon, vanilla and butter until well blended, then stir in walnuts.
- Pour filling into pastry shell.
- Bake on lowest rack of oven until filling jiggles only slightly in center when pan is gently shaken (about 50 minutes).
- Place on a rack and let cool until slightly warm.
- Meanwhile, prepare Hard Sauce, if desired. Top each slice of pie with a dollop of sauce.
- Makes 6 to 8 servings.
