Orange French Toast
- 2 eggs
- 1/2 c. orange juice
- 1 tsp. brown sugar
- 5 to 6 slices French bread, cut 3/4-inch thick
- 1 to 2 tsp. cooking oil
- maple flavored syrup
- 2 pkg. active dry yeast
- 1/2 c. warm water (105~ to 115~)
- 2 Tbsp. honey
- 1 2/3 c. milk, warmed to 105~ to 115~
- 1 1/2 tsp. salt
- 2 Tbsp. butter or margarine
- 6 c. flour
- oil for greasing
- 1 tsp. butter or margarine, softened (optional)
- In a large bowl of electric mixer, sprinkle yeast over the warm water.
- Add 1 teaspoon of the honey.
- Let stand until soft (about 5 minutes).
- Stir in milk, remaining honey, salt and the 2 tablespoons butter.
- Add 3 cups flour.
- Blend then beat at medium speed until smooth and elastic (about 5 minutes).
- Stir in about 2 cups more flour to make a soft dough.
- Turn dough out onto a board or pastry cloth coated with some of the remaining 1/2 to 1 cup flour.
- Knead until dough is smooth and satiny and small bubbles form just under surface (10 to 15 minutes), adding just enough flour to prevent dough from being sticky.
- Cover ball of kneaded dough with plastic wrap and a kitchen towel; let rest for 30 minutes.
