Chocolate Haupia Pie Recipe

  1. In a large bowl pour melted butter over chocolate graham crumbs. Toss to coat. Reserve, cover, and refrigerate 1/2 cup of crumbs. Press the remaining crumbs into the bottom and sides of a 9-inch pie dish.
  2. In a medium bowl melt chocolate in the microwave, heating on high in 30 second bursts then stirring until chocolate is completely melted. Set aside.
  3. In a medium saucepan whisk together coconut milk, milk, vanilla, sugar and cornstarch until thoroughly combined. Heat over medium while whisking constantly until mixture begins to thicken. Reduce heat to low and cook for 10 more minutes, continuously whisking then whisk in melted chocolate.
  4. Remove mixture from heat and pour into prepared pie dish and use a spatula to spread the pudding evenly in the dish. Let cool uncovered on the counter for about 10 minutes then cover with plastic wrap and refrigerate overnight. Just before serving cover the top with cookie crumbs. Serve chilled.
