Pork Barbecue Sandwiches
- 2 to 2 1/2 lb. pork sirloin roast
- 5 c. water
- 1 1/2 c. chopped onion
- 1 c. chopped celery
- 2 Tbsp. brown sugar
- 1 1/3 c. ketchup
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. vinegar
- 1 tsp. prepared mustard
- 1/8 tsp. pepper
- In Dutch oven, combine meat and water.
- Bring to boiling. Reduce heat and simmer covered for 1 3/4 to 2 1/4 hours or until meat is very tender.
- Remove meat from broth; reserve 1/2 cup broth.
- Return broth to saucepan and add onion and celery.
- Cook, covered, for about 10 minutes or until veggies are very tender. Stir in brown sugar, ketchup, Worcestershire sauce, vinegar, mustard and pepper.
- Remove meat from bones and discard fat and bones.
- Chop or shred remaining meat.
- Add meat to mixture in saucepan.
- Bring to boiling.
- Reduce heat and simmer uncovered for about 10 minutes or until the texture is desired consistency. Serve on buns.
- Makes 6 to 8 servings.
