Sweet And Sour Pork
- 1 lb. boneless pork, cut into strips
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. vegetable oil
- 1 (20 oz.) can pineapple (1/2 c. juice reserved)
- 2 Tbsp. cornstarch
- 1/4 c. chicken broth
- 2 Tbsp. sugar
- 2 Tbsp. catsup
- 1 Tbsp. soy sauce
- 1/4 tsp. ground ginger
- 2 c. broccoli florets
- 1 medium red pepper
- 4 scallions (1-inch lengths)
- hot cooked rice
- Sprinkle pork with salt and pepper.
- Heat oil in wok or skillet over moderately high heat.
- Add half the pork.
- Cook 3 to 6 minutes, stirring constantly.
- Cook through, remove from wok, repeat with remaining pork.
- Reduce heat to moderately low.
- Mix pineapple juice and cornstarch and set aside.
