Potato Cheese Bake
- 6 medium potatoes
- 20 oz. sour cream
- 1 1/2 c. grated Cheddar cheese, divided
- 1 bunch chopped scallions
- salt and pepper to taste
- bacon bits (optional)
- chives (optional)
- chopped green scallion tops (optional)
- Boil potatoes in jackets until fork-tender.
- Refrigerate potatoes until cold (approximately 1 hour).
- Peel and grate cold potatoes.
- Add sour cream, 1 cup grated Cheddar cheese, scallions, salt and pepper.
- Put mixture in buttered casserole dish.
- Top with 1/2 cup grated Cheddar cheese and bacon bits.
- Chill for several hours.
- Bake at 350u0b0, uncovered, for 35 to 45 minutes. Garnish with chives or chopped green scallion tops, if desired. Makes 6 to 8 servings.
- Great for crowds.
- Easy to make ahead of time!
