Potato Cheese Bake

  1. Boil potatoes in jackets until fork-tender.
  2. Refrigerate potatoes until cold (approximately 1 hour).
  3. Peel and grate cold potatoes.
  4. Add sour cream, 1 cup grated Cheddar cheese, scallions, salt and pepper.
  5. Put mixture in buttered casserole dish.
  6. Top with 1/2 cup grated Cheddar cheese and bacon bits.
  7. Chill for several hours.
  8. Bake at 350u0b0, uncovered, for 35 to 45 minutes. Garnish with chives or chopped green scallion tops, if desired. Makes 6 to 8 servings.
  9. Great for crowds.
  10. Easy to make ahead of time!
